By using a smaller roaster, we are able to control the roast extremely well, thus giving you a consistently perfect roast – One which is not under or over roasted.
The infrared gas burners were initially chosen because of their clean burning characteristics – infrared gas burners produce only 75% of the carbon monoxide and carbon dioxide typically produced by an atmospheric burner.
Radiant heat is the obvious choice, as all other roaster on the market use the combustion gases from the burners as their roasting medium. In the Diedrich roaster, the primary roasting medium is the clean air drawn across the heat exchangers and through the roasting drum.
